The objective of our wine making philosophy is to develop the full flavour potential nature has provided in the grapes. We proceed to fermenting the juice of grapes to wine as gently as possible. We follow two diverse wine making directions. Rigid juice clarification and slow fermentation in stainless steel tanks are essential measures to produce fruity and fresh white wines, strong in varied flavours. Ageing red wines and fermenting Chardonnay wines in wooden casks, especially in small oak barrels, create wines of great complexity. Classic bottle fermentation in the cellars of Münzberg Estate is the method of choice for our delightful Riesling and Pinot sparkling wines. When the Münzberg is covered with snow, our father Lothar loves to play with his copper „toys“. Producing some outstanding distillates, he concentrates all spirit or flavour from our plum, mirabelle or bartlet pear trees which they have been able to accumulate in their fruits during the summer.
