The Tawse Winery is nestled in the gentle slopes of our 32-acre vineyard located on the Vineland Double Bench of the Niagara Escarpment. In designing our facility we had three goals in mind. First, design a winery that uses the naturally sloping terrain to create a six level gravity flow processing facility. By using gravity, we gently handle our fruit and juice from pressing to bottling with minimum manipulation that can bruise or aerate the wine, releasing some of the intense bouquets and flavors. The philosophy behind creating the Tawse Winery was a blend in itself. We passionately believed in practicing traditional artisanal winemaking techniques. We also believed that enhancing these techniques with state-of-the-art gravity-fed processing and natural geo-thermal energy would allow us to gently and skillfully process each varietal bringing out its individual nuances and characteristics without compromise. So it became our mission to create an innovative, ecologically friendly winemaking facility and invite some of the world’s most renowned winemaking expertise, such as Pascal Marchand from Burgundy to help us with our goal of making Canada’s finest wines. At Tawse we don’t believe quality is something you can arrive at quickly. Crafting our wines takes more time, but the results are truly worth the wait. Today the Tawse Winery produces exceptional premium wines in very limited quantities.
