Highland Park is a Scotland’s most northerly single malt whisky distillery, located on Orkney Island. It’s a lightly peated malt, characterized by rich, rounded flavors of heather, golden apples, vanilla and sweet tobacco smoke. After “unofficial” production by Magnus Eunson in the 1790s, Highland Distillers became an established brand in the early 19th century, founded by Robert Borwick and John Robertson. This is around the same time that King George IV gave Scotch royal approval and the Excise Act cut production taxes for commercial distilleries, making room for category expansion. However, Highland Distillers really came into its own in 1876 when it was bought by William Stuart and James Mackay. Not only did the malt begin to achieve class status, but blenders such as Chivas and Dewars were purchasing it to enrich their products.
