The Hatzidakis winery was founded in 1996 by Haridimos and Konstantia Hatzidakis on the island of Santorini, Greece. The winery resides in an original cave of Santorini that was abandoned several years ago during the earthquake in the 1950s. By 1997, the Hatzidakis transformed the cave into a small, artisanal winery and Santorini’s famous kouloura vines can be found just outside the cave. Within these vineyard plantings one can also find Santorini’s famous tomato plantings. Most of the vineyards, however, can be found on the outskirts of the village Pyrgos Kallistis at 150-300 meters facing north/northeast. The vineyard covering spans a total of 10 hectares throughout the island plantings. Hatzidakis has always and continues to follow organic vineyard practices as set by EU standards, but has not applied for classification.
