Dão Sul – Sociedade Vitivinícola, S.A., a company established in 1990, has as base of its foundation the passion for the wine and the confidence in the enormous potential of the Dão region by its founders. Quinta de Cabriz, an estate near Carregal do Sal, with a magnificent house and chapel of the 17th century, is nowadays one of the main promoters of regional development with the conversion of old vines and new plantations with modern culture techniques. With the successful elaboration of the first wines, Dão Sul advanced step by step until the realization, in 1998, of its more ambitious project: the construction of a great complex, where in a harmonious way, wines of quality and tourism get together. The production of quality wines is based today in a new conceived winery, equipped with the most modern vinification equipment, integrated in a bigger unit that uses also a cellar for staging the oak barrels, another one for staging the bottles, a chemistry laboratory and a sensory analysis laboratory. This is where white and red wines are produced every year. The sparkling wines, the distilled spirit wines and the liquor wines of “Quinta de Cabriz” are compiled in fortunate years by the team of winemakers, composed by Carlos Lucas and Carlos Rodrigues. – Description from Dragac
