The grape picking period is an essential stage to elaborate a produce that you will enjoy. The decision to start picking is related to the maturity of grapes, which are totally brought to the vat place of the property. The vintage is pressed thanks to a pneumatic wine press. The potential degrees are good enough naturally (12-13°C) ; it is then possible to avoid a systematic chaptalization. In order to keep the characters of our wines, we do not add yeast to the must ; the natural yeast transmit their rural flavours to the wines. Then, we put the must in oak barrels, where they will slowly ferment in an underground cellar. The wines are preserved on fine dregs during one year and they are regularly beaten until the end of the second fermentation (malo-lactic). Our choice is to let nature express itself through our wines. That is why we elaborate age-worthy wines with a rustic touch.
