As winemakers we are just custodians of that fruit allowing for the reflection of the site, varietal and vintage. In pursuit of this, Copain has sought out vineyards with expositions, soil compositions, climates, clones and rootstock selections capable of producing wines of distinction and singular character. The selected terroirs we source from are, in our belief, capable of expressing the truest varietal character interwoven with site characteristics and ultimately the vintage nuances. Further enhancing this expression is our belief in organic farming practices which allows the natural balance of flora and fauna inherent in each site to impact the developing vine, fruit and finally the wine. Winemaking practices aim to express each sites unique qualities which thereby means a minimum of intervention.
