All of the great Domains that inspired us to make wine are fervent believers that great wine begins in the vineyard. As winemakers we are just custodians of that fruit allowing for the reflection of the site, varietal and vintage. In pursuit of this, Copain has sought out vineyards with expositions, soil compositions, climates, clones and rootstock selections capable of producing wines of distinction and singular character. The selected terroirs we source from are, in our belief, capable of expressing the truest varietal character interwoven with site characteristics and ultimately the vintage nuances. Further enhancing this expression is our belief in organic farming practices which allows the natural balance of flora and fauna inherent in each site to impact the developing vine, fruit and finally the wine.   • I'm of the mind that decanting is a good thing. Especially with aged wines. I've decanted young wines anywhere from an hour to up to seven hours just to see how the structure would differ.
