Clos Pacalis is a secret garden protected by high walls. Peaceful (Pacalis in latin…). Almost cut from the world. The shadow of an olive tree. The will to just lay there. It's here, in this place, that Nadine Adenis and Anthony Dufour created the winery. With the desire to produce a kind of wine that makes you stay sipping for hours under these trees. The domain gathers Syrah, Carignan and Grenache on the sunny hills of Ferrals les Corbières, in the very south of France. Here these hillsides vines are called « les clinques ». Every year they do battle with the thorny scrub and rocks that threaten to over take them. These vines are hard to work because they take the exact shape of the slope and defy the laws of geometry. There are also some old vines deformed by years of unsure cutting. Vines of small output for much work. But they are the ones that drew our attention, those on chaotic soil with rich grapes.
