At Chateau Les Carmes Haut-Brion, each individual vine, every step of the winemaking processes receives meticulous care. Didier Furt and his wife Caroline have recently renovated this jewel of an estate. The cellars have been enlarged. Small vats from 40 to 80 hectoliters allow separate vinification of each vineyard block. The wine matures in small oaks casks in the aging cellar built in 1987, and is then bottled at the chateau. The estate is advised by the Dean of the Faculty of Enology of Bordeaux, Yves Glories, an eminent researcher ans consulting enologist. Glories has created a technique for precise monitoring of grape skin color and tannins, allowing exact measurement of optimum ripeness and hence the choice oh the perfect harvest date. It is thus possible to adapt the vinification of each vat to accurately reflect the vineyard and vintage.
