Château Golan, located in the southern area of the Golan Heights, opened its doors in the summer of 1999. The vineyards, fully owned by the winery, are planted, not too far from the Château, above the point where the Yarmuk and Roked rivers meet. Wine production at Château Golan combines European traditions with modern knowledge and technology. The grapes are harvested by hand in the early morning, and transported immediately to the nearby winery. The fermentation process takes place in stainless steel vats, and in most varieties, without the addition of commercial yeast cultures. The wines undergo an aging process of between a year to a year and a half in oak barrels of various sizes and types. Bottling takes place, shortly after the wines leave the barreis and the wine is aged in the bottle for an additional year before being sold. – Description from dvoristanac
