The winemaking process is conducted meticulously with comprehensive monitoring and supervision. Harvesting is intentionally carried out late in order to obtain the best possible ripeness. After a very careful sorting process, the grapes from each plot of vines are vinified separately with strict temperature control and long maceration periods to extract all their aromatic potential and good tannins. The aim is to respect the land and ensure the wines achieve their best expression - concentration, flavour, finesse and balance. Maturing takes place in French oak barrels for 12 to 16 months depending on the potential of the vintage. During this time, fining with egg-whites finishes off the clarification process before the wines are bottled at the Château. – Description from Dragac
