Bodegas Sierra Salinas

The building was based on two main principles: thermal isolation and the exploitation of gravity in order to make the wine racking easier. The first aim has been achieved by placing the oak barrels in the cool basement cellar of the building and also utilizing the air conditioning system during hottest seasons. The wine making area is north-facing with the purpose of assisting in the control of the high temperatures reached in this suntrap area. A second main aim tries to ensure the integrity of the grapes by avoiding any pump racking. The winery consists of three heights, in such a way that the grapes take up the transformation as they start going down through the various levels of the building. The vinification plant is placed on the first floor, the pressing area on the second one and the bottling plant on the third (basement cellar). – Description from JelaDragoljevic
