  • Consider the Barolo bottlings - used to be 5 - FIVE - years just to consider drinking them, highly tannic and acid.ic  With better viticulture and winemaling they usually only sit for 3 years upon release.  Like Brunello though some delay that even more depending on barrel tasting (There are several 2011 Barbarescos and Barolos just released.) b...
