One of the primary winemaking tehniques used is called "cold soak". Instead of fermenting the grapes immediatly after harvest, fruit is placed in stanless steel tanks and held for 5-6 days at a temperature of 44 degrees Fahrenheit. This period of cold soaking allows grape skins to maintain contact with the juice for deep color and flavor extraction, controlling the release of angular tannins.
