Read moreSo I got my copy of Harrington's (out-of-print) "Cocktail: The Drinks Bible for the 21st Century" (http://www.amazon.com/gp/product/0670880221 ) today, and I figured I should try one of its featured (ie, pictured, rather than just having the recipe) drinks. I'd also been considering playing around with rum (a spirit with which I'm not very familiar) and have had on the back of my mind getting started on making drinks that include egg whites. All of that came together, at a random flip into the glossy section of Harrington's, with a modification of the Clover Club, which I'll go ahead and call the Dry September Morn. Here 'tis: !http://eclipsed.net/~gr/Pictures/2008-12-10/Dry_September_Morn.jpg! Harrington asserts, separately, on his Clover Club (2 parts gin, one part lemon juice, 1/4 oz grenadine/raspberry syrup, 2 tspns egg white), "For a drier taste, try 1 teaspoon maraschino liqueur instead of a syrup," and, "When rum is used instead of gin, accordin to 'The Old Waldorf-Astoria Bar Book', a September Morn is made." So that should give you an idea of where we're headed here... 3 oz light rum (I used 10 Cane) the juice of 1/2 a small lemon (about 1 oz) 1/2 oz maraschino liqueur one egg's white (slightly over 2 tspns) Remove the spring from a Hawthorn strainer (the kind that has a spring; see http://www.drinkboy.com/BarTools/Strainer.html ), place it and several cubes of cracked ice in a shaker. Add all the ingredients and shake for at least 30 seconds (to mix the egg whites thoroughly with the alcohol, on the principle of killing off the bugs), strain into either a cocktail glass or a wine goblet, garnish with a lemon wheel.    (hide)

  Okay, here's my poor man's (ie, without access to anything but the PLCB and DE ... I will add 0.5 measures of 10 Cane Rum (mostly for the sugar) and some ground cloves, and garnish with a thin slice of apple

  10 Cane Trinidad Rum NV

  Snoothrank: Starting at $31^.99

  Young and a little light, but already tasty (vanilla) and intersting as a cocktail base. Finish too short.
