Food Pairings for Wyndham Estate Shiraz Bin 555 Sparkling Shiraz
This was a refreshing surprise. I didn't believe the label when it said it would go well with game, but this was the ultimate thanksgiving wine. Welch's grape soda meets Sam Adams chocolate bock beer. I don't know how else to describe it. Convincing the rest of my dinner party that this would be perfect was the toughest part. Everything else was smooth sailing.

2005 Vintage Vintage Conditions The winter months were ideal, with above average rainfall and normal temperatures allowing soil profiles to receive sufficient amounts of rainfall prior to spring. Favourable weather conditions during Spring and Summer provided a good start for the vintage, resulting in well balanced vine-canopy growth. A warm, dry Summer extending well into Autumn with cool night temperatures ensured gradual ripening. These conditions produced fully ripened Shiraz grapes with excellent colour and intense flavours and varietal expression. Harvest Date March to April 2005. Vinification and Maturation High quality Shiraz parcels exhibiting varietal fruit flavour were selected from extensive vineyard searching by our winemaking team. The fruit was sourced predominantly from South Australian wine districts. Seasonal conditions enabled our Shiraz grapes to reach full maturity. This has enabled the winemakers to produce a range of rich, round and generous base wines with great depth of flavour and soft balanced tannins. Fermentation took place over 10 – 12 days in a combination of static and rotary fermenters. Attention to cap management regime and temperature control have maintained the Wyndham Estate BIN 555 Shiraz characteristics of softness and generous flavour coupled with great drinkability. A selection of predominantly American oak hogsheads was used for the maturation of selected wine parcels for a period of 12 months prior to blending and bottling. Analysis Alcohol: 14.5% ALC/VOL Total Acid: 5.7g/L pH: 3.6 Bottling Date From July 2007. Colour Deep crimson red with vibrant purple hues. Bouquet The nose displays rich plum, blackberry and spicy fruit aromas complexed by subtle vanillin oak. Palate A rich, full bodied wine showing powerful berry fruit flavours; plums, dark cherries with slight lifted spice characters are evident. It is soft on the mid palate, with fine tannins and with a generous balance of integrated oak, all of which contribute to a finish of good persistence.
<p>This Shiraz is deep crimson with shades of purple, and incorporates fruity strawberry and plum flavors with hints of black licorice and pepper. Medium-bodied and recommended to pair with red meat, game, or cheese. </p>
