Winemaker's Notes:

WINE MAKING After rigorous vineyard inspections and meticulous attention to detail by our winemaking team, the highest quality Shiraz parcels were chosen. These parcels exhibited intense varietal characters which displayed exquisite fruit flavours. The fruit was sourced predominantly from South Australian wine regions. Seasonal conditions enabled our Shiraz grapes to reach full maturity. This provided the winemaking team the best possible fruit to produce a range of rich, round and generous wines with great depth of flavour and soft balanced tannins.Fermentation took place over 10 – 12 days in a combination of static and rotary fermenters. Attention to a strict cap management regime and temperature control has helped the Wyndham Estate BIN 555 Shiraz to display the softness and generous flavour it is renowned for, coupled with great drinkability. A selection of American and French oak hogsheads were used for the maturation of selected wine parcels for a period of 12 months prior to blending and bottling.

This was a refreshing surprise. I didn't believe the label when it said it would go well with game, but this was the ultimate thanksgiving wine. Welch's grape soda meets Sam Adams chocolate bock beer. I don't know how else to describe it. Convincing the rest of my dinner party that this would be perfect was the toughest part. Everything else was smooth sailing.

Bought a dozen of these 16 years ago- now have 2 left. They have aged well, now full bodied, still tasting richly withou tanning-wish i'd had some more ! Later vintages are also very tasty. It is a reliable wine.

Medium crimson red with purple hues. Rich berry fruit with lifted Shiraz spice. Subtle yeast complexity and light vanillin oak are evident. Medium to full weight with soft tannins and a fine persisten
