Winemaker's Notes:

Wolffer Estate ''Cool As Well'' Brut is a lovely Long Island sparkling white. Created from 100% Chardonnay from Wolffer's oldest Vineyard that is fermented in stainless steel, aged 2 months sur lees with no malolactic fermentation, then filtered and fermented again per the Methode Champenoise, and finally aged for an additional 36 months in bottle before release.Classic aromas of fine yeast and almond notes, brioche, ripe pears and fresh peach on the nose. On the palate, flavors of fresh pear, lemon, pineapple and toast with vibrant, playful mouthfeel, fine tannins, great texture and acidity, intense body and beautiful balance with a long, creamy finish. Extremely food-friendly with great aging potential, this sparkler is an excellent accompaniment to food. Pairs especially well with shellfish, seafood bisque and other cream-based soups.
