Winesmith Cabernet Sauvignon California 2005

Winemaker's Notes:

Tasting Notes: This is "real wine" with wonderfully dense, melted tannins. Its main component is a product of the celebrated Peterson vineyard, picked at the peak of phenolic ripeness, resulting in a rich, generous base wine of soft round tannins and a sweet core of cassis. The tiny berries of Tulucay Vineyard yield very low volumes of intensely tannic juice packed with blueberry aromas, providing us with a Napa Cabernet of monstrous proportions which after 37 months in the cellar emerges in the best vintages as our $100 Crucible. Winemaking Notes: We experimented with a natural yeast fermentation on a portion of the 2005 vintage, and found the result too highly fragrant for the hollow Crucible style. On the other hand, a small proportion was absolutely magical when blended with the Peterson, enhancing its structural framing and adding elements of mysterious "come hither" to the nose. Technical Notes: Appellation: California Production: 1500 Cases Alcohol: 13.8% Elevage: Four weeks microbullage pre-ML followed by 15 months in small neutral oak Return to Grapecraft-Wine Smith wine list

WineSmith wines always harken to European style goals: plush, velvety structure, aromatic integration, mineral depth. When your guests taste WineSmith, the first sip should carry them away, like pressing the DOWN button on the elevator. Many California wineries try to "knock your socks off" with wine styles which eschew grace in favor of impact. Not us. After the first taste, you'll probably remain fully clothed.
