RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
Food Pairings for Williams Selyem Pinot Noir Sonoma Coast Precious Mountain
Always a complex wine with aromas of wild berries, cherry, rose water, Asian spice, jasmine blossoms and crème brûlée. In your mouth the ripe, red berry flavors explode with a nice balance of acidity, mushrooms and mineral. The ripe, somewhat youthful tasting tannins are complemented by the concentration of fruit and long, succulent finish. An extremely pretty and feminine wine with great aging potential.
Aged 16 months.
Notes: 63% new, 37% 1-year-old barrels
|Alcohol: 14.4%||pH: 3.41|
|Total Acidity: 6.4 grams per liter|
