Rich and dark on the nose with fine earth and dried herb base notes topped with vanilla, wood toast, black cherry licorice, and blackcurrant aromas. This is a pretty spicy Cabernet, with notes of black pepper and licorice interwoven with sweeter notes of vanilla and toast on a bed of dry blackberry and black cherry fruit. the tannins are a bit spiky, but pleasant—more hard than abundant—and they add some nice cut to the palate and extend on to the slightly astringent yet well-fruited finish. A nice blend of wine that toes the line between traditional and modern. Would be best with food. 88pts

Lightly jammy with a touch of pepper and herb accenting the faint black fruit topped with notes of smoke and vanilla. A little lean and ungenerous up front with a soft texture and modest black currant fruit accented by vanilla and some chary oak that turns bitter on the modest finish. 85pts

Deep, dark ruby/purple. Plum with anise and hints of mid-east spices. Medium finish. Held up well to steak and bake potatoes. Nice but sort of one dimensional. Note sure if more age will do any good. Yet this was a welcome change to the few other Americans we have seen here. The scent is very ripe, full of very dark fruit, but instead of being harsh and woody (this sees "only" 38% new wood) this is full of sweet aromas and some cigar box savoriness. Very full bodied, very sweet fruit, but unlike previous Cabs we have seen, this does have enough tannin and acidity to keep it all together. In other words, there is a perverse kind of balance in this wine: there is for my tastes too much wood, too much fruit, plenty of tannin and high acidity, yet all these elements are harmonious in relation to each other. Despite its size, it is rather refreshing so there is some moreishness to it. I would be intrigued to try this in five years or so if the elements I don't like would have faded by then. I can imagine that this is a pretty decent, fairly priced (by Finnish standards) Napa Cab for those who like such a big style. But for now at least, this isn't one for me. What a disappointment. I didn't think it was possible to completely ruin 2007 Napa Cabernet, but they have. This is a harsh, tannic, one-dimensional flop. The winemaker should hang his/her head in shame. So much for Gallo raising the quality.

William Hill Estate Winery is a special place founded in 1978. Set on a benchland - off the valley floor, but below the steeper slopes of the hills - with a southwestern exposure, the vines bask in abundant sunlight.

93 points - Wine Advocate "Even better is the exuberant 2007 Cabernet Sauvignon Bench Blend. This powerful, rich effort is the finest William Hill Cabernet made in the past 25 years. An opaque purple color is followed by notes of charcoal, incense, creme de cassis and spicy oak. Full and rich with nicely integrated wood, acidity and tannin, it should drink well for 10-15+ years. Now owned by the vast Gallo empire, Gallo deserves enormous credit for finally getting these wines back on the track. The William Hill brand has been one of the most mediocre Napa names for many years, but that is certainly not the case with the current and upcoming releases".Winemakers notesThis big, luscious Cabernet Sauvignon was sourced from the best blocks of our benchland estate vineyards. The small crop produced exceptional fruit quality with intense fruit flavors of raspberry, dark cherry, blackberry and dark chocolate. The integrated tannins and concentrated flavors of this wine continue into an elegant finish. The wine was filtered and aged in 100% new French oak for 21 months.

Winemaker's notes:Our 2006 Napa Valley Cabernet Sauvignon exhibits currant and raspberry aromas with undertones of cassis and deep blackberry flavors. A touch of spicy oak brings elements of vanilla and clove to the palate. Rich and plush, this wine possesses ripe, mouth-coating tannins, complemented by the finesse inherent in fruit from the William Hill Estate Vineyard.

Still dependable despite changes in ownership, this winery again delivers an elegant, well-made wine. With this vintage, it veers more toward herbaceous notes than fruity ones. The dominant flavors are of green olives and sweet bell pepper. Don't think, however, that it's lean. Oak provides fatness, and the right foods, like grilled red meat, will coax out the berry sweetness.

Packs a mouthful of tarry black cherry flavor onto firm structure, folding its fine-grained tannins into the finish with enough elegance to warrant cellaring. Best from 2000 through 2005.

William Hill is a well known Napa Valley producer that makes great quality wines at reasonable prices. The Cabernet has a soft tannin structure and an added richness with a polished texture. Dense blueberry and blackberry fruits are abundant on the palate, with a touch of cedar and licorice on the finish. Drink this with a wild mushroom risotto or any dish featuring portobello mushrooms.

From the makers of Louis Martini and Ghost Pines, the William Hill makes a fine addition to your collection - affordable luxury! Robust and complex, with heady notes of tobacco, leather and cedar overlaid with cassis, plum and star anise. Great buy for a yummy cab that is delicious now, worthy of cellaring, and works as well on its own as it does with steaks, pork loin, veal or grilled vegetables.
