What to Expect

Chablis is a region of France's Burgundy region responsible for some of the most distinctive expressions of the Chardonnay grape. On the limestone rich soils of the area, Chardonnay produces wines that can be steely, yet rich with orchard fruits and mineral tones. Unlike the typical white Burgundy, most Chablis sees little or no new oak which allows the grape to express itself with a purity that barrel aging can obscure. Often quite reticent in their youth, Chablis may require several years of ageing in order to be able to fully express the depth and richness it keeps in reserve.

Pale, green-tinged color. Reticent, ethereal nose hints at pineapple, grapefruit and spices. Big and rich but airy in the mouth; shows the breadth of a wine from clay-rich soil but with no heaviness. Quite lush and seamless, with captivating flavors of white peach, grapefruit and minerals. Finishes very long and suave. -International Wine Cellar 91-93

Fevre owns or controls nearly one quarter of the acreage in Preuses. Their 2006 Chablis Preuses marries fruit from a southeast-facing parcel just above the Cote de Bouguerots and conducive to cool fruit and overt minerality, with a southwest-facing parcel inherently inclined toward richness that was harvested at hugely high ripeness even before this year's ban de vendange.
