Bottled three weeks before I tasted it in late June, Fevre’s 2012 Chablis Champ Royaux — based, as usual, on purchased fruit — offers a juicy amalgam of honeydew and lime on a glossy palate, leading to a relatively simple but refreshing, invigorating and persistent finish. Plan to enjoy it through 2014.
Round, with peach, yellow plum and a hint of mineral. A firm structure keeps this focused, with a hint of lemon zest on the finish. Drink now through 2010.
