OVERVIEW In over twenty-five years, Wild Horse Winery & Vineyards has grown from its humble beginnings to take its place as one of the Central Coast's leading producers of premium varietal wines. Our success is rooted in a commitment to crafting wines that are consistently high in quality and represent a good value. With the exception of Pinot Noir, the winery's flagship varietal, fruit from the Paso Robles growing region is the cornerstone of the red wine program at Wild Horse, including Merlot, Cabernet Sauvignon, Zinfandel and Syrah. WINEMAKING The 2005 Zinfandel was hand-harvested into half-ton picking bins and transported in a refrigerated truck to the winery. Once the fruit arrived, it was de-stemmed and crushed into six and ten-ton open-top fermentors. During primary fermentation the must was hand-punched or pumped-over two to three times a day in order to control the fermentation temperature and encourage skin and juice contact for gentle extraction of the tannins. Upon cap fall, the wine was pressed off into a mixture of French and Hungarian oak cooperages with 22% being new cooperage. After 12 months of barrel aging, the barrels were hand selected and blended to produce our 2005 Central Coast Blend.
