Wild Horse Pinot Noir 2004

Winemaker's Notes:

Cold pre-fermentation at 50°F. Extended fermentation and punch-down over 3-4 weeks at 73-75°F. About twenty percent of the wine finished fermentation in Burgundy barrels. Oceanic micro-climate, with heavy influence from the Pyrenees. Large temperature differential from day to night with summer temperatures reaching 86°F in the day down to 50°F at night. Perhaps no grape variety is as sensitive to climate as Pinot Noir. To ensure that this Pinot Noir delivers pure varietal character, we harvest fruit from vineyards in the Oceanic zone of Limoux, France. This is a remarkably elegant and complex Pinot Noir. Many people are surprised to find that this microclimate is created by the influence of the distant Atlantic Ocean. Less well known than Burgundy and Champagne, it is similarly characterized as being a perfect climate for cool-weather varietals such as Pinot Noir.
