Silver Oak has always been one of my favorites. This bottle gave us a bit of trouble. We opened it on New year's Eve 2008 and uncorked, it smelled of tight, overripe zinfandel. In the glass, it was stringent and peppery, again tasting more like an old vine zinfandel. We decided to give it an hour or so in the decanter and left our glasses to breathe as well. Once we came back to it 1.5 to 2 hrs later, the Silver Oak I know and adore had shone through a bit more. Not the best I have had from them, but solid. Perhaps we opened it a couple years too soon. If you get this and plan to open now, decant it for at least an hour.
This was a great wine which I tasted in Aug 2008. I decanted the wine for an hour, but estimate that I could have decanted at least another hour.
The color is dark, deep red, darker than ruby. Very elegant! The nose is full of maple, light fruit and has moderate tannins. The initial taste is moderately sharp, light fruit and lingers in the throat. The follow-through lingers in the throatm but fades quickly and has no mouth coat. I suggest that this wine pairs well with pork chops, mushrooms and rib-eye steaks.
Silver Oak Cabernet has a way of sucker-punching me with the label. Every bottle I try is outstanding even though I know there must be something similar without the big price that goes with the name. I love the big dark fruit on the palate and the long smooth finish. The soft tannins make a great steak taste much better.

Aromas of olive-tinged, creme de cassis intermixed with sweet vanillin and smoky oak lead to a sweet, chunky, ripe, cedary wine with an attractive texture, an expansive, fruit-forward style, and a spicy finish. It should drink well for 10-12 years.
Each of Silver Oak's two estates – one in Napa Valley and the other in Alexander Valley – is dedicated to producing a single wine. These two Cabernet Sauvignons consistently reflect the very best of their appellations. Dark ruby color and a nose of cassis syrup, chocolate and baking spices. This incredibly concentrated wine has a fruity attack, great body and integrated tannins in the medium length finish. It will continue to improve through 2028 given proper cellaring.
