Waterstone Cabernet Sauvignon Napa Valley 2008
Not yet reviewed; 2007 vintage rated 92 points by James Suckling: Lots of freshness in this with spices, ripe berries, currants, and chocolate cake. Full and velvety on the palate, with ripe tannins and a long round finish. Lots going on. This continues to be one the best under-$25 Cabs on the market. There is impeccable balance here between ripe, plush opulence and muscular underlying structure. This is another legend-in-the-making wine at this price. Aromas of cedary oak, currants, black cherries and ripe plums are rich and concentrated on the palate. The firm tannins underlying the wine's core provide balance, leading to a long, lingering finish.
Editorial Reviews for Waterstone Cabernet Sauvignon Napa Valley
Smoky on the nose yet bright with fresh red currant and lightly jammy blackberry fruit, all cupped in a gently sweet vanilla note. A touch rough around the edges, this shows some noticeable wood tannin in the mouth with good acidity adding some freshness to the dark cherry/blackberry flavors. There's also noticeable oak sweetening the palate and adding vanilla and spice notes that persist on the moderately long finish, which also shows some cherry pit notes and a touch of heat. 87pts
Attractive in the glass. Some oaky bouquet, some leathery, soil aromas. Initial palate sensation is that this is a fairly light Cab. Flavors are primarily earthy. Tannin sneaks up on you. Since the initial impression is that the wine is watery, the fact that after a couple tastes, there is a lot of around-the-edges-of-the-tonge dryness comes as a bit of a surprise. Slightly sour on the finish. US$19.99 at Hi Time in Costa Mesa.
classic napa cab.
Terrifically aromatic - it filled the room with a great aroma when I decanted it. Very dark ruby color. Lots of cherry and dark fruit flavors. Finish is fairly long, with a nice raspberry note at the end. Tannins are firm but silky. Paired this with a coffee and pepper crusted beef tenderloin and it worked well. Great QPR - compares well with a Cabs at twice the price.

The firm tannins underlying the wines core provide balance, leading to a long, lingering finish. The 2011 vintage is reflected in this wine, favoring balance to overt ripeness.Vintage:The 2011 growing season proved to be a challenge in Napa Valley. A wet winter and spring extended with rainfall into mid-June, delaying bloom and set. A long, cool growing season followed, which forced growers to open canopies to ensure sunlight and warmth. Harvest was further hampered by autumn rain storms, which encouraged an earlier-than-normal harvest. Overall, quality of fruit is high, and lower alcohols are expected for the vintage.Vineyards:Well-established hillside vineyards are the foundation of this wine, giving the finished blend its intense inner core of fruit. The complexity and balance of this vintage was achieved through diverse sourcing.Vinification:Following destemming, the hand-picked grapes were stainless steel-fermented and received extended skin contact before being transferred to barrels. The wine was aged in small French oak barrels for 24 months (80% new barrels) where the wine completed malolactic fermentation. With its Bordeaux-like presence, this wine is deep, rich, and lingering. Firm, integrated tannins frame the concentrated, dark fruit (currant, black cherry, wild berry, plum.) Toasty oak and an earthy edge add to the wine's great complexity. - WineryVarietal Composition:88% Cabernet Sauvignon11% Merlot1% Cabernet FrancAlcohol: 14.5%TA: 0.64 g/100mlpH: 3.62
Showing an opaque garnet core with a brighter red rim. A classic cabernet nose that opens with some air showing cassis black cherry and tobacco leaf with black berry & plum. It shows a medium to full-bodied weight with ripe black fruits herbs and pain grille wrapped in soft well rounded sweet tannins that give the wine length and great texture. The acidity slips in nicely holding everything together and keeping the flavors fresh. Great right now with a little bit of air and should hold nicely for the next 5 years. Geoffrey Binder.
This is amazing value in California Cab. Its hard to believe. Aromas of fresh herbs with currants and blueberries as well as mint. Its full body with velvety tannins and a juicy finish. Lots of fruit but not overdone and not over alcoholic. Drink a... James Suckling. A Cabernet Sauvignon wine from California in USA. 2009 Waterstone Cabernet Sauvignon 750ml

Waterstone Winery, started in 2000, is a collaboration between negociants Philip Zorn and Brent Shortridge. The German-born Zorn previously made wine at Sunny St. Helena, Gauer Estate, Paraiso Springs and Tria.Zorn made this Cabernet combining fruit from four different Napa Valley AVAs. The wine is showing sweet berry, some depth, balance, and restraint. It’s an excellent wine with lots of potential for aging perhaps as long as a dozen years. The grapes were hand-picked. Following destemming, the fruit was stainless steel-fermented and received extended skin contact before being transferred to barrels. The wine was aged in French oak barrels for 18 months, 70 percent of which were new. The listed alcohol is 14.8 percent and there were a whopping 12,500 cases produced. Shortridge and Zorn also make Zinfandel for their Z-52 label.
