A light nose with a very fine mousse of bubbles. Very yeasty and rather nutty. A very crisp wine with a short citrus finish. Drunk as part of a 12 course tasting menu at WD50. Paired with mackerel and smoked beets, then shrimp and tarragon macaroons.
