Rudy's winemaking philosophy centers on the concept that great wines are created in the vineyard and not in the winery. His most important winemaking tool is his palate: his ability to understand and analyze each vineyard’s wine potential through the tasting of the grapes. All of the grapes used in the von Strasser label are picked at their optimum ripeness when the flavors are peaking and the tannins have become ripe and soft. Based on these harvest decisions, the correct combination of fermentation and winemaking techniques (including cold soaking, fermentation temperatures, extended maceration, aeration, and an aggressive barrel program) are employed to maximize each vineyard’s potential. The end result is wine of great extract and a tannin complex which is both huge and soft at the same time. The resultant mouth feel is often described as being “chewy”, and makes these hillside wines both approachable when young, yet also worthy of further development with age. Read less

Classically styled, but with some problematic acid, and far too little on the aftertaste. Won't cellar as well as it ought to at the pricepoint.

Winery Notes:A selection of the best lots off the mountain estate vineyard the 2005 is rich and age-worthy. Blended with a small amount of Petit Verdot and Merlot it shows sweetly ripe flavors of black currents cherries dark chocolate and plums with smoky vanilla new oak nuances. The tannins are pure mountain Napa dense and defined. Drink now through 2015.

Winery notes: Only the darkest most extracted lots from our estate vineyards are used in making this wine. This wine is deep in color. Aromas of cassis cocoa powder vanilla and sarsaparilla are interwoven with flavors of black currant dried plums and cherries and chocolate. Dense with a slightly sweet finish that lingers on. Varietal Make-up: 80% Cabernet Sauvignon 15% Petit Verdot 5% Merlot.

Deep red-ruby. Cool aromas of dark cherry, bitter chocolate, licorice and herbs. Tightly wound and rather folded in on itself, but the blackcurrant and licorice flavors already show lovely aromatic lift. Thereandrsquo;s firm acidity here but this very suave wine finishes with ripe, supple tannins. This should repay a few years of patience.

Rudy von Strasser has become one of the premier cabernet growers in Napa Valley; his 2004s are clear proof of his talent. This wine is a barrel selection of some of the best lots from his estate, including a good dose of petit verdot (15 percent) and a touch of merlot (5 percent). It’s long on pure black currant fruit, succulent as a fresh forest mushroom. And there’s a youthful electricity that drives it, sleek and elegant even if it is far too young to drink — if you want to get the full benefit of the ferrous tannins and the potential complexity they hold. If you like to follow a wine through all the stages of its life, open this now, an hour or two before serving a beef tenderloin stuffed with mushrooms.
