Vivác Winery is the creation of brothers Jesse and Chris Padberg. In November of 1998 they embarked on a new mission "To make the best wine possible and have a good time doing it!" Inspired by the lifestyle of the people throughout France and Italy; the dance between art and science, the wine world drew them in instantaneously. The brothers began reading every publication they could find about grapes, winemaking, and the world of wine. Taking in by other local winemakers, they were taught about the wine business in general and more specifically the wine business in Northern New Mexico: "At every turn people were there to help us out". Working with University of California at Davis, the brothers gained credits and knowledge, both continue the pursuit every day. Chris, Jesse and wife Michele all completed a certified wine sommelier course through the International Wine Guild in Denver, Colorado. Jesse and Michele completed their 2nd level wine sommelier exam and are Certified Executive Sommeliers now working on their Master level. Chris will complete his 2nd level soon and his wife Liliana completed her first level during their visit to Argentina! Chris and Jesse were born and raised in Dixon, New Mexico. Chris Attended the University of Tulane in New Orleans, LA for 3 years before transferring to and graduating from the University of New Mexico in 2001. Chris transferred to UNM to work on Vivac Winery with Jesse, while he finished up his degree in history. He now lives with his lovely wife Liliana Zavala and son in Dixon. His son Maddox Zavala Padberg was born May 12th 2007. Jesse attended the University of Colorado at Boulder where he got his degree in Spanish Literature. He now lives in Dixon with his beautiful wife Michele Alexandra Bartley. Their son Denim Diesel Padberg, was born June 29th 2006. The goal for the Padberg brothers is to make the best wine possible. Only the very highest quality products are used to produce these wines. At every turn they treat their wines with the utmost care even choosing to use a bladder pump so as not to bruise the wines. High quality French oak and stainless steel barrels are used for aging. After bottling, wines rest for at least 2 months before it is consumed. Every winemaking step is done meticulously by hand by Jesse and Chris, as is the trademark of a boutique winery. Read less
