Type of Harvest: Still havested by hand, the Sangiovese grapes used for Vitae are a pure selection of solely quality grapes.

Vinification Method: The carefully selected very ripe grapes were destemmed and crushed into open top fermenters. Fermentation lasted about one week. At dryness, the wine was pressed, and kept in steel vats where malolactic fermention was completed.
