Crisp acidity balances and cleans." - Steve Heimoff A lot of work and love goes into this wine. Late harvests can be a challenge and this one is no exception. By the time we hand pick the grapes, they are firm raisins, almost like little marbles. To extract all the lucious nectar from each berry, we have to macerate the grapes for several days. How do we macerate them? Well, we do it the old fashion way. Anne throws on her santitzed running shoes and runs over the grapes in macrobins for hours over several days prior to pressing. After fermentation and filtration, the wine is hand bottled and hand dipped. We release it around Thanksgiving and it's always gone by spring... Due to weather, the Late Harvest Viognier is not available every year.
Our efforts were rewarded with a wine that displays ample honeysuckle, peach, apricot and pear aromas. The texture is supple yet the acidity nicely balances the sweetness to give a clean lingering ripe pear finish. This wine will accompany ligher desserts and would be a great match to a sampling of crisp apples and pears, prosciutto and matched with local aromatic cheeses.
