The grapes are located in the area of Agrelo, Luján de Cuyo, 800 meters above sea level. The grapes are harvested manually and in plastic boxes in mid - February and in the morning so that they keep their freshness, and under these conditions they are put directly in the
pneumatic press for must extraction.
Fermentation
First: After having harvested the grapes with a low sugar degree, the must and the pomaces are macerated until the liquid has been consumed 50%, and the must continues fermenting by itself, (this fermentation is done between 15° and 18 degrees read more...C.
Second: It is takes place in stainless steel tanks with temperature control and expedition liquor with yeast addition to allow the second fermentation, which is controlled and stopped when the product reaches a pressure of 5 atm and a residual sugar of 15 g/l.
Description
Sight: intense red with blue tones and a very bright, giving origin to violet bubbles.
Nose: the red fruits predominate, cranberry, plums, and a touch of toasted bread and almond, which are the typical red wine aromas.
Mouth: a good equilibrium between acidity and the sugar. Adorned with red fruits, a lot of greasiness and tannins that give a firm structure which characterizes the MALBEC wine. (hide)
