Vincent Pinard Sancerre Cuvée Flores 1995

Winemaker's Notes:

Produced from the juice of the first pressing of the oldest vines, only in the top vintage years. Begins to show true quality after a minimum of five years ageing. SITUATION Wine produced from a selection of 2.50 acres called Detorbe in the village of Chavignol. GRAPES VARIETY 100% Sauvignon SOILS Chalky soils VINIFICATION The grapes are picked after ensuring perfect ripeness. The juice of the first pressing are fermented naturally with wild yeasts in stainless steel tanks with thermoregulation. The wine then commences its malolactic fermentation and is matured on lees for one year. TASTING The Grande Cuvée Sancerre Blanc is a very elegant wine, well balanced, rich and concentrated. It develops flavours such as nut, honey and brioche. It presents a good length in the mouth and on the finish. FOOD AND WINE MATCHING Atypically for a Sauvignon Blanc this wine can embrace all aspects of a meal. It marries particulary well with « bouchées à la reine », white meats and chocolate.

ah, la loire! my love! this wine embodies what i consider the perfect sancerre. complex, yet not a hint of bitterness.
