twice per day and the total cuvaison usually lasts from 13 to 15 days. New oak for the oak runs from one-third to 40% though there is none for the Bourgogne. He does not fine but does filter and then bottles barrel by barrel, usually 12 months later. The quality here is clearly on the way up as Dancer gains experience and this is a Domaine to watch for both reds and whites. Serious, reserved if not austere aromas and a trace of wood spice with sweet, ripe, round flavors that exude a fine minerality and deliver excellent length. This is very fresh, bright and expressive on the palate and once the aromas blossom, this should be a very pretty wine yet be capable of 6 to 10 years of improvement.
