Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Weingut: Vinas del VeroLand: SpanienRegion: Aragonien - SomontanoInhalt: 0,75 lAlkoholgehalt: 13,0 Vol.%Lagerfähigkeit: 4-6 Jahre ab JahrgangEmpfohlene Serviertemperatur: 8-12 °C Weißwein > Spanien > Aragonien

Winemaker's Notes:

The Secastilla vineyards are manually harvested under optimum ripening conditions, usually at the beginning of October. Alcohol fermentation takes place over 8 days between 25ºC and 28ºC, with maceration lasting up 20 days. Afterwards, the wine undergoes malolactic fermentation. This wine ages for 10 months in new French oak barrels. It is not clarified, but is filtered during the bottling process 10 months later.

Tasting Notes:

Old-vine Garnacha in Somontano’s Secastilla Valley can offer layers of complexity that the Garnacha grape doesn’t often exhibit, at least not when the wine is made from younger vines. Along with the wine's vanilla from French oak are notes that old Garnacha vines can impart: black and red plums and cherries, mint and even spearmint, and juicy length.
