I agree with what I found on the net: ... rounds off any dish ... The noble Chardonnay has rich, but still soft acids, a fruity aroma and a full taste, which acts as a perfect complement to many gastronomic specialties. It loves the company of several cheeses, fatless meat, risottos and fish. Serving temperature: 12 °C "The Vinakoper winery is the largest producer of the Koper area, cultivating 420 hectares (1038 acres) of vineyards, the majority planted with red varieties particularly suitable for the warm Mediterranean climate: Refosk, Merlot, and Cabernet Sauvignon. The characteristic red wines of Vinakoper are full-bodied, rich in extract, and quite heavy. Refosk is the lightest, displaying the youthful liveliness of a wine with moderate acids, and does not gain with age. The establishment of the Vinakoper Wine Cellar dates back to 1947. Throughout the decades, the company underwent several reorganisations and today it operates as a limited-liability company closely connected to the local environment of the Slovenian Istria and open to the Mediterranean. With over five hundred hectares of own vineyards, the Vinakoper Wine Cellar is the largest Slovenian wine producer. In various vineyards spread from the Adriatic to the Istrian hinterland, we successfully grow the local varieties refosco, malvasia and yellow muscat, which are typical of the area. We are also achieving enviable quality with international varieties such as chardonnay, pinot gris, merlot, cabernet sauvignon and shiraz. In winemaking, we rely on tradition and in-depth knowledge of local features, combining them with advanced technology. The quality of our wines is validated by the ISO 9001/2000 quality certificate, which we obtained in November 2002. All the procedures in the cellars are in line with the HACCP standard of food safety. We also bottle all the wines produced in our cellar. Red wines prevail, representing 70 percent of our entire production. For several years, we have been devoting particular attention to the aging of wine in wooden barrels. Our range of products comprises a large selection of variety wines and blends, including the line of quality wines named ‘Okusi Istre’, the excellent gastronomy wines of the CAPRIS line, sold through the Horeca system, and the most prestigious line, named ‘Capo d'Istria’, which features wines matured completely in wood.
