Food Pairings for Vina Los Vascos Grande Reserve

We were introduced to this wine by the trained sommelier at our local, nationally acclaimed, culinary school restaurant. He also shared where he purchased this for home use when on sale. Promptly went there and bought a case @$9.95/btl, an exquisite value for this exquisite--for the price--wine.

For $10 you can't go wrong with this. Very Bordeaux-like approach. I would never guess this was from Chile.
I say there is absolutely no differences between the Reserva and the regulara. This reminds me of a $10 2005 Bordeaux. Some cotton candy on the mid-palate. I would never guess this was a Cabernet. More like a south american pinot.
Dark ruby red. Aroma strong with cherries, blackberries and a touch of liquorice. Strong palate with chocolate and tobacco that is blended with oak and young tannins. Well balanced with a soft, subtle finish. Could probably use some more aging. I will try this again later.

Nice focus to the juicy blackberry and brier flavors here, with toast and mocha notes, and a long dark fleshy finish.
Deep ruby red colour. Complex fruity nose, ripe cherries and blackberries, firm figs and notes of cedar, tobacco, cinnamon, white pepper, mint and bitter chocolate.
The bouquet of cassis, blackberry and controlled oak is welcoming, while the palate shows a spot of piercing acidity along with snappy black cherry, cassis and light olive flavors. This is a quintessential Chilean Cab with a hint of herbal character but also bold color, power and very good fruit quality.
Deep ruby. Musky, complex aromas of red berries, smoked meat, rose oil and cured tobacco. Dense and fleshy, displaying ripe red fruit flavors and an exotic note of candied flowers. More tangy on the finish, which shows a slight tart edge to its redcurrant and spice notes.
Here's a cabernet that shows fine integration of tannin and good concentration of cherry fruit, all in a relatively subdued style. Whiat it lacks in power or freshness, it makes up for in soft, mature fruit flavor. A solid Chilean choice.
Light ruby. Medium-bodied. Balanced acidity. Moderately extracted. Mildly oaked and tannic. Plums, black pepper, cherries. A wine of moderate depthy and character, with vivid, persistent fruit couched in an elegant frame.
Supple, with toasty oak notes, sweet vanilla, cherry and light smoke flavors. Has a candylike appeal.
Rainfall was relatively low (347 mm) in 2010, and so irrigation was necessary as soon as the winter ended, in August and September. This extra water enabled the vines to continue in a normal growth cycle. Temperatures were cool during the flowering stage resulting in lower yields with less compact bunches. Growth was then healthy and regular, producing grapes of outstanding quality with remarkable concentration. The harvests took place between 6 April and 13 May. The vines had reached their full potential with healthy grapes and excellent quality at the time of harvest.
