Soil: ORGANIC AGRICLUTURE, CERTIFIED by ECCYSA<br/><br/>Type of Harvest: the grapes are hand picked from vines with an average age of over 25 years and collected in 15 kg crates.<br/><br/>Vinification Method: after grapes are destemmed, fermentation take place in in 50 Hl oak vats at temp. below 31 C. Malolactic fermentation in new american oak barrels. Aging in oak barriques made up of 60% french and 40% american oak. Further ageing nine months in the bottle<br/><br/>Vinification Temperature: 27-31 C<br/><br/>Type of Wood: 60% french oak 40% american<br/><br/>Malolactic: in new american oak barrels<br/><br/>Aging Time: 15 months<br/><br/>Sugar Rate: 0-5 g/l<br/><br/>Total Acidity: 5,63
