Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Medium ruby core with a bright ruby rim. Red and black raspberries swim in milk chocolate and candied licorice aromas. The palate is ripe and fresh up front, followed by a note of white truffles. Nice medium tannins support the wine well. Mike Supple. A Merlot wine from Mendoza in Argentina. 2004 Dona Paula Merlot Los Cardos 750ml
