- Traditional, real-deal, Vin Santo is a rarity today. Made only in stellar vintages and left up to nature as to whether the wine will turn out. The grapes are fermented then put into tiny casks where they sit for 7 years before opening it up. This is the kind of precarious behavior that gets the palate going.
