This sparkler from southern France is made from 70% Chardonnay and 30% Ugni blanc grapes grown on clay / limestone soils. This “cuvée” is produced from a selection of wines picked for their potential for bottle fermentation and aromatic suppleness. Fermentation is at 18-20°C. The second fermentation period is a few months at a temperature of 15-20°C. The wine is de-vatted int the winter months. This affordable and approachable sparkler is light in colour with reflections of green. Sparkling fine bubbles accentuate this wine’s vivacity. A fine nose of butter and hazelnut gives way to suggestions of brioche and almond on the palate. It is well-balanced and harmonious. As with many sparkling wines, this is better drunk young, with all its freshness intact. Serving temperature: 8°C, as an aperitif or to accompany desserts.
