Food Pairings for Vilafonté Red Blend Series M
“A Benchmark Wine” With a combination of 56% Merlot and Malbec for black fruit and flesh, and the remaining Cabernet for structure, we consider this wine a benchmark for our Series M; seductive, attractive, but a firm foundation for aging. An attractive aromatic complexity is developing which includes black cherries, a hint of honey-vanilla; a subtle note of cinnamon, some cocoa, and tea leaves. On the palate, Series M is supple on entry, showing good mid palate weight;, some chewy tannins appearing on the back palate supported by solid fruit concentration. Texture is of velvet; and the wine shows a lovely fruit finish; lengthening as it ages. Series M is a luscious wine now; but has a fine future ahead of it for those who wish to provide some cellar age.
