RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
Food Pairings for Vietti Nebbiolo Langhe DOC Perbacco
The nose showed dark red berries, roses, chalky minerals and a hint of herbal pepper notes. On the palate, it was medium bodied and filled the senses with savory red fruits. The finish showed notes of dried spices and hints of tannins. It seems this wine is losing it's red candy notes in trade for a more savory profile, which I find attractive, yet not fully developed. I'm thinking another two years might yield a more balanced wine.
Tasted between 3 to 6 hours of decanting. What a treat, with a nose full of black cherry, tobacco, new leather, and a bit of anise and undergrowth. The palate shows sour cherry, earth and citrus-prune on the mid palate. Medium bodied with a fresh but slightly tannic structure. Long finish with raspberry fruit. Simply put, this is one of the two best Langhe Nebbiolo's that I've ever had.

The color is bright ruby red with garnet highlights; the nose is light, tender and delicate with hints of violet and red fruit. Dry on the palate with good body. It has texture and character. Velvety and harmonious.
Wine Advocate Review Rated 90 The 2006 Langhe Nebbiolo Perbacco is gloriously ripe and sweet, with an irresistible core of floral red fruit. This vibrant, medium-bodied wine possesses outstanding balance and also happens to be one of the world's great values. In this vintage Perbacco has a degree more muscle, structure and ripeness than either 2004 or 2005. Over the last few months the wine has put on a surprising level of weight, and it is a wine that could benefit from further bottle age. Many Barolo producers would kill for a wine like this. In a word: Awesome!! Vietti's Perbacco is made from Barolo-designated parcels that don't meet the qualitative standard for the estate's multi-cru Barolo Castiglione. Perbacco is for all practical purposes a Barolo, but because it its bottled two months earlier than regulations permit, the wine is sold as Langhe Nebbiolo. Anticipated maturity: Anticipated maturity: 2010-2021. Wine Tasting Notes Pale ruby color with aromas of ripe cherries with hints of spice. With gripping tannins, fresh acidity, this Nebbiolo shows finesse, is well-balanced, integration and a lingering finish of rose petals.
