Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

A beautiful wine with a wonderful story! If you are in the area, make sure to stop by and have a glass on the porch overlooking the Viader vineyards!

From the steep, rocky slopes of Howell Mountain, comes this well-rounded St. milion-like blend of 55% Cab Sauvignon and 45% Cab Franc. Highly aromatic with lots of cherry/currant fruit on the nose and palate. An elegant and complex wine.

International Wine Cellar ReviewRated 92Good deep ruby-red. Understated but precise aromas of dark berries, graphite and sweet oak. Then sweet, lush and soft, with a texture of liquid silk. Flavors of black and red cherry complicated by licorice. Finishes with very fin, suave tannins and lovely length. A distinctly feminine style of wine. Proprietor Delia Viader describes the 2004 vintage as elegant and supple, even soft, while 2003, she says has more punch, and shows more obvious tannins and alcohol.Wine Tasting NotesThe 2004 Viader showcases the best the vintage has to offer: intense, upfront, floral bouquet laced with chocolate, coffee, anise, earth and leather. Lingering, complex tannins firm up in the finish which is rounded by the powerful aromas of blackberry, blueberry and mint. Although quite approachable now bottle aging will further develop bouquet and complexity. This powerful gem will continue to age superbly over the next two decades. Cheers! To a wonderfully elegant mountain beauty!

Winemaker's Notes:

We use extended maceration on hand selected lots of our most promising fruit and allow malo-lactic fermentation to occur in barrel. The wine spends a minimum of 23 months in new French oak barrels in our underground caves. Our wine regime usually calls for racking every 12 - 14 weeks, so there is no need for fining or filtration. Our philosophy is to allow the grapes and terroir (all factors that influence the character of grapes grown in a specific microclimate) to express naturally in every glass of Viader.
