What to Expect
Champagne is specifically a sparkling wine made in the Champagne region of France; every other sparkling is simply that, sparkling wine. Made to be aged for a few to many years, in many languages "Champagne" is synonymous with "party". When young, Champagne exhibits the fresh fruit tones of its "cepage", or blend. Usually based on a blend the features either Chardonnay or Pinot Noir as its main ingredient, Champagne's fruit can range from citrusy to orchard fruits and even red berries. The wine gains distinct yeasty notes from its secondary fermentation, the one that adds the fizz, which is typically described as recalling brioche or bread. As it ages Champagne tends to lose its obvious fruit, which is replaced by subtle nutty tones and subdued elements of dried fruits.

This is an excellent, not too expensive, champagne to indulge yourself. I find it not as acid-y as you often find other brands. Very good with fruit--especially apples or berries. And just enough bubbles, not too much.

Veuve Clicquot Demi-Sec is perhaps the House's most "classical " champagne from the close of the last century through to the early 1900s- there was a definitive preference for sweeter champagnes. As with all blends of Veuve Clicquot- the Demi-Sec is based on a preponderance of Pinot Noir- which gives Champagne its fundamental structure. The desire for very distinct fruit favours in the blend indicated a higher level of Pinot Meunier than would be found in- for example- Brut Yellow Label. Chardonnay completes the blend- read more...contributing its special freshness and delicacy. The blend No fewer than 50 individual wines make up this cuvée. The traditional proportions for Demi-Sec are: - 40 to 45 % Pinot Noir - 30 to 35 % Pinot Meunier - 20 to 25 % Chardonnay The inclusion of 20 to 30 % of reserve wines ensures the consistency of the Veuve Clicquot style. These wines are kept apart- each one cellared individually- as befits its origin and age. The level of dosage - 45 g/l decided at the moment of dégorgement - results in a sweeter balance of flavours- while preserving the wine's inherent freshness. On the senses A fine- even effervescence greets the eye- the wine being a beautiful yellow with deep golden highlights. On the nose- it is rich in the scents of ripe fruit (candied fruits- berry liquor)- with hints of toasts and brioche. In the mouth- the wine displays both roundness and mellowness- combined with a delightful freshness due to its gentle acidity. The aromas of ripe fruit are very noticeable. With its equilibrium tending towards sweetness and fruited flavours- Veuve Clicquot Demi-Sec goes particularly well with those desserts which have a fruit base: pear tarts- gratin aux agrumes- charlotte aux abricots. But equally- îles flottantes- crêpes Suzette- crème brûlée- nougat glacé- or France's traditional Twelfth Night cake- are perfect partners for this great Champagne. After additional cellaring (two to three years- or even more in the right conditions)- Demi-Sec develops yet richer notes of praline or toasts. It is then ideal with caramel- or praline-based desserts: Paris-Brest- tarte Tatin- pears with caramel etc... Do not hesitate to serve Demi-Sec from a carafe- as they did in Madame Clicquot's time. A few minutes in a previously chilled carafe will allow the wine to show off its rounded flavour- and all the splendour of its golden hue. Rating: 85/100 - As reviewed by International Wine Cellar in Issue 111, November/December 2003 ($50) Apple and pear aromas lifted by a spicy gingery quality. Spicy but rather disjointed, with orange, melon and tropical fruit hints and a seemingly full dosage that does not quite cover suggestions of underripe fruit. Combines some unabsorbed acidity with a slightly cloying finish.
A very good Champagne that won't fail to please. The Veuve Clicquot Ponsardin Brut Yellow Label is blended with Chardonnay and Pinot Noir almost half and half with only a touch of Pinot Meunier. This mix is very classical with a good amount of Chardonnay in it (of which I am a big fan of). For Champagnes in the same price range however, I prefer the Moët & Chandon Brut Impérial. Although the Brut Impérial has very little Chardonnay in it, I enjoy the emphasis on the flavour of Pinot Meunier that sets Champagnes apart from other sparkling wines.

I love this champagne and its a shame that ever since the president of Veuve North America published the book "French Women Don't Get Fat" the price of this drinkable champagne has gone from an average $40 to an average $55. Its a GREAT $40 bottle of champagne but an average $55 bottle.

The Champagne produced today by Veuve Clicquot still lives up to the high standards set by Madame Clicquot, a young widow (veuve in French) who took over her late husbands estate at the beginning of the 19th century. It was Madame Clicquot who developed the important riddling procedure for Champagne--a way to remove dead yeast cells from bottles.
