The 2007 Particular Cabernet Sauvignon contains small amounts of Petit Verdot, Malbec, and Cabernet Franc in its blend and was sourced from a single vineyard. The wine was aged for 14 months in new, mostly French, oak. Brier, damp earth, espresso, violets, black currant, and blackberry aromas set the stage for a sweetly-fruited, savory, layered Cabernet with excellent grip, volume, and length. It already displays some complexity which will only increase with another 2-3 years of cellaring. Piercing oak deals aromas of lemon and graphite, and there's serious berry fruit, herbal scents and sous-bois to go with that. Lively and showing good maturity and acidity, with flavors of black fruits, vanilla, chocolate, toast and tobacco. Good on the finish, with everything coming full circle. - M.S. Red-ruby.
