Food Pairings for Valdivieso Merlot
Laid back New Zealander Brett Jackson is very much settled in Chile - although he hasn't lost his lifelong affection for the All Blacks - and much of Valdivieso's success in recent years has been down to his efforts. Based in Lontue, the company has a wealth of vineyards and the quality of the terroir is shown by the Single Vineyard wines. The whole range encapsulates everything that Chile excels at: rich, vibrant flavours and smooth, glossy textures - and the wines deserve the multitude of gongs they have picked up in recent years. The Merlot vineyards are located along the northern edge of the Rapel Valley being planted on the slopes of the ranges of this valley. A relatively warm site, which is tempered by his more southerly sloping aspect, and receiving some cooling effects from the nearby river. These conditions produce ripe grapes with soft and silky tannins. The Valdivieso Merlot has intense ripe plum on the nose, sweet spices, coffee, chocolate and delicate smoky notes following. On the palate it is soft and smooth with ripe tannins giving good length and structure. Enjoy this food friendly Merlot with lean red meats, pastas, stews, white meat with soft spices or served with mushroom sauce.
