V Mitolo Waveform Cabernet Sauvignon Mclaren Vale 2013

Winemaker's Notes:

"Blackcurrant, blackberries at the fore, complemented by dark chocolate, plum, mint, cinnamon and toasty, spicey french oak in the background. The palate is full and the finish is long, and smooth. This wine was matured in French and American oak Hogsheads (20% New), for 18 and was fermented on skins for 8 then pressed into barrel to complete alcoholic and malolactic fermentations. The vineyard age for our wines range from 20 to 30 years, with fruit coming from four different vineyards and microclimates from the McLaren vale coast line to McLaren Flat. Soil types range from terra rossa, limestone, ironstone and sand. The vineyards are located around 50 km’s south of Adelaide, South Australia, with crops ranging from 2 to 4 tonnes an acre.
